Ingredients

1 cup oats flour

½ cup coconut flour

½ cup almond meal

1/3 cup coconut sugar

¼ cup chopped pecans

2 tablespoon flax seeds

¼  cup pumpkin & sunflower seeds

2 tablespooon dried cranberries

¼ cup unsweetened coconut flakes

Pinch of cinnamon

½ teaspoon baking powder

1/3 cup creamy almond butter

1 very ripe banana, mashed

1 tablespoon vanilla extract

2 tablespoon coconut oil, melted

Method

1. Preheat oven to 350 degrees F and line 1 large baking tray with parchment paper.

2. In a large bowl mix together all the dry ingredients except the maple sugar.

3. In a separate bowl, cream together mashed banana, maple sugar, almond butter, vanilla extract and coconut oil

4. Tip the dry ingredients into the wet bowl and stir together.

5. Spoon 10-12 balls onto the baking sheet and bake for 10-12 minutes, or until lightly golden brown and soft in the middle.
