CRISPY BAKED POTATOES
Ingredients
5 lbs yellow potatoes
Olive oil
Kosher Salt
Crushed Garlic
Paprika (or dried herbs)
1/2 cup chopped chives ( optional)
Method
1. Pre-heat oven to 425 degree F.
2. Wash and cut the potatoes into 1/4 cubes. Add them to a large pot of salted water and turn the heat to high.
3. Parboil the potatoes for 10 minutes ( when the water boils, set your timer)
4. Drain potatoes into a colander and shake/bounce the potatoes around until the edges start to mash up (this is where the magic happens!).
5. Place the potatoes on a lined baking sheet, drizzle with olive oil, crushed garlic, salt and paprika and pop them into the oven for 25-35 minutes.
