Vegan banana bread doughnuts

Ingredients

2 overripe bananas, mashed

1 large flax egg

1 tablespoon almond extract

¼ cup melted coconut oil

2 tablespoons non dairy milk of choice

1/3 cup maple syrup 

3/4 cup almond flour

1/2 cup coconut flour

1 teaspoon baking soda

1 teaspoon baking powder

Pinch of salt

1/3 cup chopped chocolate chips 

Method

1. Preheat oven to 375 degrees F and grease two, 6 hole doughnut tins.

2. With a fork whisk together bananas, almond extract, milk, flax egg, maple syrup & coconut oil.

3. In the same bowl add in the dry ingredients except for the chocolate chips.  

4. Once mixed thoroughly fold in the chocolate chips ( I used 85% dark chocolate).

5. Spoon mixture into doughnut tins - you should get about 10 doughnuts in total.

6. Bake for 25-30 minutes.
