Crispy Baked Chicken Strips

Ingredients

3 large chicken breasts, cut into strips

2 eggs

½ cup cold water

2 tbsp. dijon mustard

3 tbsp. Italian seasoning

2 cups almond meal 

Olive oil spray

Salt and pepper

Method

1. Preheat the oven to 400 degree F and line a baking pan with parchment/baking paper.

2. Season the chicken breasts with salt and black pepper and set aside.

3. Using two separate bowls, beat the eggs, dijon mustard and water in one bowl and pour the almond meal and dry herbs into the other.

4. Dip the chicken strips into the egg mixture first then dredge them into the seasoned almond meal and place onto the baking sheet.

5. Just before popping them into the oven, spray each strip with olive oil and bake for 12 minutes (on each side).
