BANANA JAM SLAMS

Ingredients

3 ripe bananas, mashed

3 tablespoons almond butter

1/4 cup maple syrup

1 tablespoon vanilla extract

1 egg (sub flax egg)

¼ cup unsweetened shredded coconut flakes

1 ¼ cup oats, roughly chopped

¼ cup coconut flour

½ teaspoon baking soda

pinch salt

1/3 cup blackberry jam

Method

1. Preheat oven to 350 degrees F and line 1 large baking tray with parchment paper.

2. In a large bowl mix together oats, salt, coconut flour, shredded coconut and baking soda.

3. In a separate bowl, cream together mashed bananas, peanut butter, vanilla and egg.

4. Tip the dry ingredients into the wet bowl and stir together.

5. Spoon 14 balls onto the baking sheet and lightly press your finger in the centre of each cookie to create a well. Fill with blackberry jam.

6. Bake for 10-12 minutes, or until lightly browned.
