Turkey Curry
Ingredients
To make the meatballs
1 lb ground turkey breast
1 tablespoons yellow curry powder
1/4 cup chives, chopped
Kosher Salt & Pepper
To make the sauce
1 shallot, finely chopped ( or use regular onion)
1 garlic clove, grated
1 thumb sized piece of fresh ginger, grated
Small pinch red chilli flakes
1 1/4 tablespoon yellow curry powder
1 1/2 cup can diced tomatoes
1 can light unsweetened coconut milk
1/2 cup chicken stock
1/4 cup chopped cilantro
1/4 cup chopped chives
Kosher Salt & Pepper
Cooked white rice
Method
1. Pre-heat oven to 425 degree F.
2. In a medium bowl add the turkey mince, curry powder, chopped chives, salt & pepper. Using your hands mix well and roll into decent sized balls (I made 12 big ones). Place the meatballs onto a greased baking sheet and bake for 15 minutes.
3. While those bake start your sauce!
4. Heat a little olive oil in a large skillet over medium heat. Once the oil heats up add the chopped onion, garlic and ginger and cook for about 5 minutes (until translucent). Stir in curry powder and cook for about 1 minute. Next add the can of tomatoes and cook for 3 minutes.
5. Stir in the coconut milk, chopped chives, cilantro, salt and pepper and cooked meatballs and simmer on low for 5 minutes. If the sauce seems too thick add in chicken stock and simmer for another 5 minutes.
6. Serve over rice and enjoy!
