Chicken Kale Tahini Bowl

Ingredients

1 lb ground chicken breast

1/2 cup coconut aminos

5 tablespoons cup tahini

1 very large tablespoon grated ginger

1 tablespoon dijon mustard

2 bunches lacinto kale, chopped

1 tablespoon olive oil

Kosher Salt & Pepper

500g cooked white rice

Method

1. In a small bowl, whisk together coconut aminos, mustard, salt, pepper, tahini and ginger. Set aside.

 2. In a large non stick skillet, heat 1 tablespoon olive oil and saute ground chicken until cooked.

2.  Once cooked, stir in sauce and cook for 1 minutes. Then add in kale and saute for another 2-3 minutes.

3. Serve over rice and that’s it!
