Matchstick Yam Fries
Ingredients
2 large sweet potatoes
1 1/2 Tbsp. coconut oil
1 tsp onion powder
Salt & pepper
1 large tomato
1 avocado
1/2 red onion
Method
1. Pre heat oven to 400 degrees F and line a baking pan with parchment paper
2. Peel and chop the sweet potato into matchstick pieces - you can do this by either using a mandolin or by cutting each potato in half lengthwise, and then again and then into thin strips
3. Add the fries to your baking tray & sprinkle on salt, pepper, onion powder, a generous amount of coconut oil and toss with your hands
4. Bake for 20-25 minutes tossing half way through.
5. meanwhile that is cooking chop and dice red onion, avocado and tomato and set aside.
6. Once the fries are cooked remove from oven and sprinkle on the tomato mixture a little bit more salt and enjoy!
** this is probably the healthiest rendition of nacho fries you'll ever try. We've eliminated the cheese and excess oil. Trust me, you won't even miss it I promise!**
