Chickpea Burgers

Ingredients

1 can chickpeas, drained & rinsed

1 zucchini, grated

1 small onion, chopped

2 tbsp. flax meal

1 1/2 tbsp. nutritional yeast

3 tbsp. almond flour

1 tsp. curry powder

1 tsp. garam masala

1 tsp. ground turmeric

1/2 tsp. coriander seed

Salt & pepper

Method

1. In a food processor combine chickpeas & zucchini. Pulse until combined

2. Add in dry ingredients and pulse until thoroughly mixed. If the dough feels too wet add in a little more almond flour until a sticky- dry paste forms

3. Transfer the mixture to a bowl, cover with plastic wrap and let it sit in the refrigerator for 30 minutes

4. Remove from the refrigerator and form into 8 balls. Gently press each ball until small patties form

5. To cook, place a non stick pan on medium high heat ( use a little oil) and cook the patties for 3-4 minutes on each side ( or until browned). If you don’t want to use a skillet you can cook them in your oven. I suggest cooking them at 425 F for 12-15 minutes (flipping halfway through).
