Peanut Tofu Satay (v)

Ingredients

1/3 cup smooth peanut butter

4 tablespoons coconut aminos

1 tablespoon soy sauce

1 teaspoon sesame oil

2 tablespoons fresh ginger, grated

1 cup vegetable stock (or water)

1/2 tablespoon corn starch (or arrowroot)

439 grams tofu, pressed for 20 minutes

2 carrots, peeled and cut into stripes

1 bell pepper, cut into strips

3 sprigs green onions, chopped

Rice

Method

1. In a small bowl, assemble your sauce by whisking together all the listed ingredients, except tofu, onions, carrots and peppers.

2. Pour 1/4 of the sauce over the tofu and let it marinate for 30 minutes.

3. Cook rice according to package.

4.Heat a large frying pan on medium/high heat (spray with olive oil) and sauté tofu for 10 minutes. Toss in green onions, carrots, peppers and cook for another for 3 minutes.

4. Remove from stove and serve over-top rice! Serves 4.

** If your sauce is too runny, add in a touch more cornstarch making sure to whisk it in**
