Gluten Free Blueberry Doughnuts
INGREDIENTS
1/4 cup oat milk
1 teaspoon apple cider vinegar
1 tablespoon vanilla extract
3 tablespoons coconut oil, melted
1/3 cup maple syrup
1/4 cup almond flour
1 cup gluten free flour
1 1/2 teaspoon baking powder
2 teaspoon cinnamon
1 cup fresh blueberries
Pinch of salt
METHOD
1. Preheat oven to 350 degrees F and grease 2 doughnut tins with coconut oil.
2. In a large bowl, sift together flours, baking powder, cinnamon and salt.
3. Using the same bowl, make a well in the centre and add all the wet ingredients. Whisk to combine. Fold in blueberries.
4. Scoop roughly 1/4 cup batter into each round and bake for 20-25 minutes.
