Peanut Butter Dream Bars
Ingredients
base layer
6 dates, pitted
2 tablespoons maple syrup
1 1/2 cup almond meal
2 tablespoons peanut butter
1/4 cup unsweetened coconut shreds
1 teaspoon vanilla extract
Pinch of salt
caramel sauce
1/2 cup peanut butter (can use almond)
1/4 cup coconut oil
1 tablespoon maple syrup
1 tablespoon vanilla extract
1/4 cup roasted peanuts, chopped
2 tablespoons unsweetened coconut shreds
Method
1. Line an 8x8 baking pan with parchment paper and set aside.
2. Using a food processor, combine all base layer ingredients and pulse to combine. It should be slightly sticky.
3. Pour ingredients into your baking dish and press down to form the base layer. Stick in freezer while you prepare the rest.
4. In a small saucepan on low heat, combine all the caramel ingredients except the shredded coconut and peanuts. Cook for 2 minutes or until completely melted.
5. Remove from burner and let cool.
6. Once the base layer & caramel have completely cooled, pour caramel sauce over the base layer, spreading out evenly. Sprinkle on peanuts and coconut shreds pressing in so they set.
7. . Set in freezer until it hardens *completely,* about 1-2 hours. Remove, cut into 20 squares and enjoy! * store in freezer*

these are incredibly dense and not necessarily lower calorie, they are made with whole based ingredients. there are no chemicals, vegetables oils or other unhealthy/un-natural ingredients.
make sure you use almond meal and not almond flour - two very different consistency
if the dates you are using are smaller, add a few more to your mixture.
