Cheats Chicken Enchiladas
Ingredients
4 soft shell tortillas
2 chicken breasts, cooked and shredded
3 sprigs green onion, chopped
1 clove garlic, minced
1 jar salsa verde ( or green enchilada sauce)
2 cups cabbage, shredded
1 cup mozzarella cheese (or goat cheese)
Cilantro, for topping (optional)
Method
1. Pre-heat oven to 350 degrees F and pour 1/2 of your salsa verde sauce into a cast iron skillet ( or small 8x8 oven proof pan). Set aside.
2. On medium-low heat, sauté onion & garlic for 2-3 minutes. Add cabbage and cook until soft. Turn off heat and add the shredded chicken and mix until combined.
3. Fill each tortilla shell with a good amount of chicken mixture and about 1 tablespoon of cheese. Roll and place each shell face down into your skillet.
4. Pour the remaining salsa verde over the rolled shells and sprinkle remaining cheese. Cover with tin foil and bake for 12 minutes. Remove tin foil and bake another 15 minutes.
5. Serve with light sour cream, avocado, a few limes or even some more salsa!
Calories: Calories per servings will depend on which brand of shells you use. Best tip would be to scan code of the shells in MyFitnessPal and then portion out 1 tablespoon of cheese + 2 oz cooked chicken breast. And then of course, any toppings you use.
