Skillet Brownies
Ingredients
1/3 cup coconut oil, melted
2 eggs, room temperature
½ cup coconut sugar
2 tablespoons vanilla extract
2/4 cup cocoa powder (or cacao)
1 cup almond flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup chocolate chips, optional
Method
1. Preheat oven to 325 degrees F and grease an oven proof skillet. I used an 8x8 skillet (it’s small)
2. In a bowl, using an electric mixer, combine eggs, oil, vanilla & coconut sugar
3. Using the same bowl, add in flour, cocoa powder, baking powder and salt. Mix to combine. If you’re using chocolate chips, fold them in using a spatula.
4. Pour bater into greased skillet and bake for 25 minutes.
5. Transfer to a wire rack and let cool before you dig in! Serves 8
