Iceberg Salad w/ Italian Dressing

Ingredients

1 head iceberg lettuce, chopped

1 cucumber, peeled & chopped

1 pint baby tomatoes, halved 

2 oz goat cheese, crumbled 

Homemade croutons, optional

Dressing

1/2 cup olive oil

5 tablespoon white win vinegar 

1 tablespoon mayonnaise

1 tablespoon honey

1 tablespoon dijon mustard

1 teaspoon dried oregano

Salt

Pepper

Method

1. In a small bowl, whisk oil, vinegar, mayonnaise, honey, oregano and dijon mustard. Season w/ salt & pepper

2. Using a large salad bowl, toss in lettuce, tomatoes, cheese, cucumber, tomatoes and a little salt. Drizzle with ½ the dressing and top with a little cracked pepper.

3. Enjoy with your favourite protein!

** note – store remaining dressing in the fridge for next time**
