Aussie Style Chicken Parm Meatballs
Ingredients
1 pound ground chicken
1/3 cup parmesan cheese, grated
1/3 cup + 1 cup panko breadcrumbs
1 egg
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried red pepper flakes
2 tablespoon dijon mustard
4 slices prosciutto
4 slices mozzarella cheese, cut into squares
1 jar marinara sauce
Chicken Stock
Salt
Pepper
Method
1. In a large mixing bowl, combine the chicken, parmesan, 1/3 cup of the breadcrumbs, egg, salt, pepper, oregano, basil, red pepper flakes & dijon mustard. Mix until evenly combined.
2. Form the ground chicken mixture into small meatballs. Approx 10-12 depending on how big or small you want them.
3. Roll each ball in the extra panko bread crumbs and set aside. If the mixture is too wet to handle, put the meatballs into the freezer for 10 minutes, then roll in the breadcrumbs.
4. Pre-heat oven to 420 degrees F. Once hot, cook meatballs for 15 minutes, turning halfway through.
5. While those cook, heat marinara sauce in an oven proof skillet on medium heat. If the sauce is too thick, add some chicken stock to thin it out.
6. Add the partially cooked meatballs to the skillet with sauce and top each ball with 1/2 slice of prosciutto and 1 cheese square.
7. Transfer the skillet into the oven and let the meatballs continue to bake for 15 minutes until cooked through.
8.Remove the skillet from the oven and dusting with salt, pepper, freshly chopped basil and enjoy!
