Chocolate Chip Banana Baked Oatmeal Cups
Ingredients
2 cups old fashioned oats
¼ cup almond flour
1 teaspoon cinnamon
1 teaspoon baking powder
¼ teaspoon salt
1/3 cup chocolate chips
3 overripe bananas, mashed
1 egg
1 teaspoon vanilla extract
½ cup runny peanut butter
1/3 cup maple syrup
2/3 cup almond milk (or milk of choice)
2 tablespoons flax meal (optional)
2 tablespoons hemp seeds (optional)
Method
1. Preheat oven to 350 degrees F and line a 12 hole muffin tin with liners.
2. In a large bowl, whisk together all your dry ingredients until well combined.
3. Slowly whisk in dry ingredients saving the chocolate chips until the end. Fold those in.
4.Divide the batter evenly between 12 muffin tins (approx 1/4 cup scoops). Bake for 20-25.
5. Transfer to a wire rack to cool before you try not to eat them all!
