Cold Chicken Rice Salad

Ingredients

3 cups cooked white rice (approx. 1 ½ uncooked)

5 green onions, chopped

2 store bought roasted red peppers, chopped

1 cup charred corn

1 large cucumber, peeled & diced

3 chicken breasts, cooked and finely diced

Kosher salt

Pepper

Herbed Dressing

½ cup mayonnaise

3 tablespoons white wine vinegar

1/3 cup parsley, chopped

1/4 cup fresh dill, chopped

1/4 cup fresh basil, chopped

½ teaspoon cayenne pepper

Salt

Pepper

Method

1. In a large serving bowl, combine all ingredients (except dressing) and toss to combine.

2. In a small bowl, whisk together dressing ingredients until completely incorporated.

3. Slowly pour in dressing (small batches) until you reach the desired amount. I used about 1/3 of what I made and stored the rest in the fridge.

4. Serve immediately or store in fridge until you’re ready!
