Vanilla Apricot Granola

Ingredients

2 cups rolled oats

1 scoop vanilla protein powder

½ cup dried apricots, chopped

1/3 cup pecans, chopped

1 teaspoon vanilla extract

¼ cup maple syrup

3 tablespoons coconut oil, melted

Pinch of kosher salt

Method

1. Preheat oven to 350 degrees F and line a baking tray with parchment paper. 

2. Using a small bowl, mix together all your dry ingredients. Once combined, pour in coconut oil, maple syrup, vanilla extract and thoroughly mix until evenly coated. Your hands are your best tools.

3. Transfer to baking sheet and bake for 20 minutes (flipping halfway through).

4. Allow to cool and serve over yogurt or with a little milk.

5. Store in an airtight container.
