Ham & Split Pea Soup
Ingredients
½ cup green onions, chopped
1 cup carrots, chopped
1 cup celery, chopped
1 garlic clove, crushed
1 ½ cup dried split peas
1 ¼ cup pre-cooked ham, cubed
1 tablespoon fresh thyme
1 tablespoon olive oil
6-8 cups chicken stock
Salt & pepper to taste
Method
1. Using a dutch oven, on medium heat, sauté the onions, garlic, carrots & celery for 10 minutes (or until translucent)
2. Add the split peas, cooked ham and fresh thyme stirring occasionally for 3-4 minutes. Pour in the chicken stock and scrape up the bits on the bottom of the pot. Season with salt and pepper to taste.
3. Bring to a boil then let simmer on low heat for 1 hour.
4. Serve hot!

Recipe Notes
if you can’t find coked ham, buy a mini ham like I did and cook it in the oven according to labeled directions. it’s a great option to use the leftover meat for sandwhiches!!
