Smashed Eggs on Toast
Ingredients
2 hard boiled eggs
1/3 cup spinach, chopped
½ tablespoon mayonnaise
1 teaspoon dijon mustard
Salt
Pepper
2 brown rice cakes ( or sub toasted sourdough)
Method
1. In a small bowl, mash together boiled eggs, chopped spinach, salt and pepper.
2. Next, stir in the mayonnaise and dijon and mix until well combined.
2. Spread onto rice cakes and enjoy!

Recipe Notes
Boiling Eggs: In a small sauce pot, add two eggs and just enough water to cover them. Cover with a lid and place on high heat. Once the water starts boiling turn it off immediately and set a timer for 8 minutes
