Chicken Casserole

Ingredients

4 boneless chicken breasts

1 tablespoon olive oil

2 teaspoons smoked paprika

3 tablespoons curry powder

2 shallots, chopped

2 gloves garlic, minced

½ teaspoon red chili flakes

1 ½ cup low sodium chicken broth

1 ½ cups cherry tomatoes, halved

1 cup mushrooms, chopped

2 tablespoons fresh thyme

Method

1. Preheat the oven to 425 degrees F.

2. Rub the raw chicken breasts with paprika, curry powder and generously season with salt and pepper.

3. Heat a large oven safe skillet over medium high heat. Add the chicken to the pan and sear on both sides until golden, about 4 minutes per side.

4. Remove from the skillet and set aside.

5. Add 1 tablespoons olive oil to the pan and sauté the onions and garlic for about 3 minutes. Reduce the heat to medium low and add in the mushroom, chili flakes and thyme. Cook for 4 minutes.

6. Slide the chicken back into the pan, add the chicken stock and cook in the oven for 10-12 minutes.

7. Once the chicken is cooked through, add the tomatoes and basil and slide back in oven for 5 minutes. We just want to warm the tomatoes through Remove and enjoy over a bowl of hot rice!
