Crispy Baked Halibut

Ingredients

For the Fish

4 halibut fish filets (6oz each)

1 cup almond milk (or milk of choice)

2 teaspoon dijon mustard

1 egg, whisked

1 cup panko breadcrumbs

Salt

Pepper

Salad

1 box mixed greens

1 head, curly kale

2 sprigs green onions

1/4 cup parmesan, grated

1 tablespoon olive oil

1 lemon, juiced

1 tablespoon balsamic glaze (optional)

Chili Lime Mayonnaise

1 cup mayonnaise

1 lime, juiced

2-3 teaspoons Thai chili sauce (or paste)

Method

1. In a small bowl whisk together milk, dijon mustard and egg. Soak the fish filets for 10 minutes.

2. In a separate bowl, mix together panko crumbs, salt and pepper. Toss each filet into the mixture and coat evenly.

3. Turn your air fryer on to 390 degree and set the timer for 6 minutes. Place fish on the rack, spray with a little olive oil spray and bake for 6 minutes. Once the timer goes off, flip the fish and cook for an additional 3-4 minutes.

4. While the fish cooks, prep and dress you salad.

5. Now that your salad is done, move onto the chili lime mayo. However spicy you may or may not like this will dictate how much chili sauce you use. Keep tasting!

6. I find this dish is best served with steamed white rice - pairs really well with the salad and fish.

7. Enjoy! I will never not cook fish in an air fryer from now on.

Recipe Notes

  • can sub any white fish like cod for a cheaper option

  • best paired with plain rice. but baked potatoes will taste good too!

  • if you don’t have an air fryer, bake the fish on a rack (make sure its been sprayed) in the oven at 425 degrees F for approx. 10 minutes (flipping halfway through).
