Tomato Sauce w/ butter and onion

Ingredients

1 24oz jar strained tomato passata 

2 yellow onions, peeled and cut into halfs

5 tablespoons unsalted butter

2 sprigs fresh thyme

1/4 cup reserved pasta water

1/2 cup parmesan cheese

Kosher salt

Black pepper

lb pasta shape of choice

Method

1. In a medium saucepan, place the tomatoes, onions (cut side down) and the butter. Turn the heat onto medium and begin stirring until the butter melts.

2. Reduce the heat to a simmer, add thyme sprigs and cook uncovered for 30 minutes. Stir the sauce from time to time to ensure the onions don’t stick.

3. Remove the onions and season with salt and pepper.

4 Bring a large pot of water to a boil and season generously with sea salt. Add pasta of choice and cook until al dente. Remember to save some of that water before you drain!

5. Drain pasta, and bein tossing it into the tomato sauce. Use some of that pasta water to thin it out. Once coated, sprinkle with parmesan cheese and divide into 5 servings.
