Szechuan Pork Stir Fry

Ingredients

1 lb ground pork

3 talespoons low sodium soy sauce

1/4 cup coconut aminos

2 tablespoons minced ginger

1 1/2 tablespoons rice wine vinegar

1 tablespoon honey

2 tablespoons sesame oil

3 green onions finely chopped

1/2 tablespoon corn starch

1 stalk asparagus , chopped into 2 inch pieces

Cooked white rice for serving

Method

1. Using a small bowl, combine soy sauce, coconut aminos, ginger, corn starch, honey, 1 tablespoon sesame oil and rice wine vinegar. Whisk and set aside.

2. Warm 1 tbsp sesame oil in a large non stick skillet over medium high heat. Add green onions and sauté for 2 minutes. Add pork and cook until browned - make sure you break it up using a wooden spoon.

3. Pour half the sauce into the pork mixture and cook for an additional 1 minute. Remove pork and transfer to a bowl.

5. Using the same skillet, on medium high heat, add 1/2 tablespoon sesame oil. Add asparagus and cook for 3 minutes. Pour in remaining sauce and cook for an additional 2 minutes minutes.

6. Return pork mixture to the skillet and warm through on low to medium heat.

7. Serve over basmati rice and enjoy!
