Loaded Nachos
Ingredients
1lb extra lean ground beef (sub ground turkey or chicken)
1 tablespoon dijon mustard
½ tablespoon tomato paste
Salt
Pepper
1 rep pepper, diced
1 orange pepper, diced
½ cup green onions, chopped
1 ½ cup cheddar cheese, shredded
1 bag plain, baked tortilla chips ( I used siete)
2 heads romaine lettuce, finely chopped
2 tomatoes, roughly chopped
½ avocado, diced
Low fat sour cream
Method
1. Turn oven on to 400 degree F and grab yourself a large baking sheet and set aside.
2. In a large nonstick pan (over a medium high heat) begin to cook the beef. After approx 4-5 minutes, add in the bell peppers, dijon mustard, tomato paste, salt and pepper. Continue cooking, stirring occasionally until the vegetables start to soften – this should take another 5 minutes. You may even need to add some water or stock in if it begins to dry out. Once cooked, remove from heat and let cool slightly.
3.Assembly time. Divide the bag of chips in half and place 1 half on the bottom of the baking tray and sprinkle with just enough beef . Sprinkle on a little cheese and repeat with the second layer.
5. Place the tray in the oven and bake for 8-10 minutes, or until everything has melted.
6. Remove from oven and layer the top with romaine lettuce ,tomatoes, avocado and a few dollops of fat free sour cream.
Recipe Notes
the idea behind these nachos is NOT to load it up with cheese but rather protein and a whole lot of veg - so manage how much cheese you put on these, otherwise your calories will spike very fast.
the cooked protein really is the star of the show here so don’t skip out on the dijon mustard or tomato paste.
