Loaded Summer Salad
Ingredients
Salad Toppers
Grilled chicken breast, chopped into cubes
1 corn on the cob, boiled and chopped
1/2 head cauliflower, grilled in oven or on bbq
1 large cucumber, sliced into rounds
Radishes, sliced into rounds
Goats feta cheese
Grilled sourdough bread, cut into cubes
Romaine Lettuce
Dressing
1/2 cup extra virgin olive oil
1 1/2 tsp. dijon mustard
1 heaping teaspoon honey
Juice from 2 lemons
1 tbsp apple cider vinegar (optional)
1 big bunch mixed fresh herbs such as basil + thyme + oregano
2-3 tbsp. water (for thinning out if needed)
Salt & pepper
Method
1.Using a high speed blender add in olive oil, mustard, honey, lemon juice ,cider, fresh herbs, salt and pepper and pulse until creamy. If the dressing is too thick, add more water until the preferred consistency.
2. If you want to spice it up, add in the 1/4 cup grated parmesan cheese OR 1 glove or garlic for that extra goodness
