Kale Ceasar Salad

Ingredients

2 heads kale, stems removed and chopped

1/3 cup grated parmesan cheese

Dressing

3 tablespoons tahini

2 tablespoons olive oil

Juice from 1 lemon

1 tablespoon apple cider vinegar

1 clove garlic, crushed

1 tablespoon dijon mustard

Salt

Pepper

Method

1. In a large bowl, toss in the kale & parmesan cheese, salt and pepper.

2. Using an electric hand wand or whisk, mix  together the salad dressing ingredients. If the dressing seems too thick, add in a few drops of water to help thin it out.

3. Pour over kale salad and mix to combine.

Recipe Notes

  • Because kale is tough lettuce, I like to let mine stand for 5 minutes before eating. This will help break down the leaves and make it easier on the digestive track

  • highly suggest adding protein to this dish, whether that be chicken or tofu. just account for the extra calories when tracking
