EASY ASIAN CHICKEN LETTUCE WRAPS
Ingredients
2 chicken breasts, cut into cubes ( 5oz breasts)
2 tablespoons sesame oil
1/4 cup chicken stock
1 tablespoon freshly grated ginger
½ tablespoon dijon mustard
1/3 cup coconut aminos
2 tablespoon soy sauce
½ tablespoon honey
Juice from ½ lime
Salt
For The Wraps
1 head butter lettuce
1 cup shredded cabbage
1 red pepper thinly sliced
2 carrots shaved
2 green onions, chopped
½ avocado diced
Method
1. In a small bowl prepare the sauce by combining 1 tablespoon sesame oil, grated ginger, dijon mustard, coconut aminos, soy sauce, honey, chicken stock, salt and pepper. Whisk and set as aside.
2. In a separate bowl, toss cabbage, peppers & carrot slaw with lime juice, salt, pepper and 1 tbsp sesame oil. Set aside.
3. Next, heat a non-stick skillet over medium-high heat and sauté cubed chicken for 3 minutes. Pour in sesame sauce and cook for 5-7 minutes or until chicken is fully cooked through. Recommend covering with a lid and letting it simmer.
4. Assembly time. Add chicken to the base of the lettuce cups and top with cabbage slaw, a little avocado and enjoy!
