Foolproof Banana Bread
Ingredients
3 large overripe bananas
2 large eggs
1 tablespoon vanilla extract
1/3 cup almond butter
¼ cup coconut sugar
1 cup oat flour
1/3 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
Pinch of salt
½ cup chocolate chips
Method
1. Preheat oven to 350 degrees F and grease a large loaf tin with oil spray.
2. Add the bananas, peanut butter and coconut sugar to a large mixing bowl and beat until smooth. Stir in vanilla
3. Crack the eggs in one at a time making sure to beat each one before adding the next.
4. In a separate bowl, add all dry ingredients together and mix to combine.
5. Fold in dry mixture making sure not to over mix. Stir in chocolate chips.
6. Pour the batter into the loaf tin and bake for 50-60 minutes, or until golden brown and cooked through.
