Crunchy Quinoa Granola
Ingredients
2 cups quinoa flakes
½ cup unsweetened coconut flakes
½ cup chopped pecans
½ cup sunflower seeds
¼ cup sultana raisins
¼ dried blueberries
2 tablespoons cinnamon
4 tablespoons melted coconut oil
2 teaspoon pure vanilla extract
3 tablespoons maple syrup
Pinch salt
Method
1. Preheat oven to 325F and grease a large baking sheet with coconut oil.
2. Meanwhile, in a large bowl cream together melted coconut oil, vanilla and maple syrup.
3. In a separate bowl mix together quinoa, coconut flakes, pecans, sunflower seeds, raisins, blueberries, cinnamon and salt.
4. Gradually pour the wet ingredients into the dry mixture and stir until everything is evenly coated.
5. Spread the granola onto a baking sheet and bake at 325F for 25-30 minutes. Remember to stir the granola halfway through making sure it bakes evenly and doesn’t burn. Granola should be a light golden brown.
6. Let it cool for 5 minutes and then drizzle the remaining honey (forming small clusters of goodness).
** If you don’t want to use maple syrup that's absolutely fine to leave it out and substitute it with stevia**
