COCONUT LEMON BALLS

Ingredients

2 scoops vanilla protein powder

½ cup unsweetened shredded coconut

1 cup rolled oats

¼ cup coconut flour

Juice from 2 small lemons

Zest from 1 lemon

3 tbsp. Maple Syrup

3- 5 tbsp. cold water

Method

1. Line a baking tray with parchment paper

2. In a food processor combine protein powder, coconut, coconut flour, rolled oats and pulse until combined

3. Add in the maple syrup, lemon juice, zest and pulse again.

5. Next, while the processor is running, slowly add in one tablespoon of water at a time until dough begins to form.

5. Scoop out the mixture and roll into 10 medium sized balls. If the mixture sticks to your hand, put a little cold water on your palms and roll.

6. Refrigerate and enjoy!

** Should keep in the fridge for about 3 days but after that I would freeze them!**
