Healthy Blueberry Muffins
Ingredients
1½ cup oat flour
½ cup fine almond flour, packed.
1 teaspoon cinnamon
¾ teaspoon baking soda
¼ teaspoon salt
2 eggs
1 tablespoon olive oil (can sub coconut)
1 teaspoon apple cider vinegar
1/3 cup honey
1 teaspoon vanilla extract
½ cup almond milk
1 cup blueberries (fresh or frozen)
Method
1. Preheat oven to 350 degrees F and line a 12 hole muffin tin with muffin liners.
2. in a large bowl, whisk together all your dry ingredients. mix until well combines.
3. in the same bowl, make a well and add in your dry ingredients, leaving out the blueberries. Stir until evenly combined (can also use an electric mixer).
4. Fold in blueberries.
5.Divide the batter evenly between 12 muffin tins (Approx 1/4 cup scoops). Bake for 20-22 minutes or until a toothpick inserted comes out clean.
6. Transfer to a wire rack to cool before you try not to eat them all!
