Healthy GF Apple Crisp
Ingredients
Topping
¼ cup oat flour
1 cup rolled oats
¼ cup coconut sugar
½ cup pecans, chopped
¼ teaspoon cinnamon
¼ teaspoon kosher salt
Small pinch nutmeg
¼ cup coconut oil, melted
Apple Crisp Filling
6 large apples ( I used pink lady)
2 tablespoons maple syrup
1 tablespoon honey
1 teaspoon cinnamon
1 tablespoon vanilla extract
½ tablespoon arrowroot starch
Method
1. Preheat oven to 350 degrees F. Grease an 8x8 baking pan with nonstick cooking spray. Set aside.
2. Using a small bowl, combine the flour, oats, coconut sugar, cinnamon, nutmeg, salt and pecans. Pour in melted coconut oil and mix until well combined. Place in fridge while you prepare filling.
3. Place apples, maple syrup, honey, cinnamon, vanilla and arrowroot in a large bowl and toss to combine. Allow to sit for 5 minutes.
4. Place the apple mixture in prepared pan and sprinkle evenly with topping.
5. Bake the crisp for 45-55 minutes, or until topping is golden brown and filling is bubbling. Remove from oven and cool 10 minutes on wire rack.
