Healthy Carrot Raisin Cookies

Ingredients

¼ cup coconut oil, melted and cooled

1/3 cup coconut sugar

1 egg

1 teaspoon vanilla extract

1 cup shredded carrots

3/4 cup all purpose gluten free flour

1 cups rolled oats

½  teaspoon baking soda

¼ teaspoon kosher salt

1 ½ teaspoons cinnamon

¼ cup hemp seeds

¼ cup raisins

Method

1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

2. In a large bowl mix together coconut oil, coconut sugar, egg and vanilla and whisk until combined. Fold in shredded carrots.

3. Using the same bowl, toss in all your dry ingredients and mix with a wooden spoon until well combined.

4. Use a tablespoon measurement and scoop out 16-18 balls. Gently flatten with your hand. Bake for 9-11 minutes or until golden brown around the edges.

5. Cool cookies for a few minutes on the baking sheet before transferring to a wire rack to finish cooling.

Recipe Notes

  • these cookies are not meant to be sweet, so if you want them to be, I would suggest using 1/2 cup coconut sugar - just make sure you account for the extra calories
