GF, DF Oatmeal Chocolate Chip Cookies
Ingredients
1 egg
1/4 cup almond butter
3 tablespoons coconut oil, melted
¼ cup maple syrup
1 teaspoon vanilla extract
1 tablespoon ground flax meal
1 tablespoon hemp seeds
1 cup gluten free rolled oats
1/4 cup oat flour
½ teaspoon kosher salt
½ teaspoon baking soda
1/3 cup dark chocolate, chopped
Method
1. Pre heat oven to 350 degrees F and line a baking tray with parchment paper. Set aside.
2. In a medium sized bowl, whisk together egg, almond butter, vanilla extract, and coconut oil.
3. Fold in dry ingredients and let the batter stand for 10 minutes before scooping onto the tray.
4. Using tablespoon sized scoops, begin measuring out 14 balls.
5. Bake for 10-13 minutes. Remove from oven and let cool for 10 minutes.
