Egg White Bites

Ingredients

1 tablespoon olive oil

2 cups spinach, chopped

1 cup bell peppers ,chopped

Dash, red chili flakes

6 whole eggs

1 ½ cup egg whites

4 slices prosciutto, chopped (sub ham)

1/2 cup cheddar cheese

Salt

Pepper

Method

1. Preheat oven to 350 degrees F and grease a standard non-stick 12-slot muffin pan with cooking spray and set aside.

2. Heat a large non-stick skillet over medium heat and add in oil, red chili flakes and vegetables and cook for 3-5 minutes.

3. Add in chopped prosciutto (or ham)  and cook for another 2 minutes.

4. Whisk together eggs, egg whites & cheese in a large bowl and pour in cooked veggies.

5. Divide the egg/veggie mixture evenly into the prepared muffin pan (makes approx 10) & bake for 15-20 minutes, or until the tops are firm to the touch and eggs are cooked.
