Maple Apple Cider Doughnuts
Ingredients
1 1/2 cups apple cider
2 eggs
1 tablespoon vanilla extract
1/4 cup almond butter
2 tablespoon salted butter, melted
1/2 cup maple sugar ( sub brown or coconut )
2 cups all purpose flour
1 1/2 tsp baking powder
1 teaspoonbaking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 apple, peeled, cored & chopped
Method
1 First things first, boil down your apple cider for about 10 -12 minutes or until you have 1/2 cup remaining. This concentration is key!
2.. In a large mixing bowl whisk together, eggs, melted butter, cooled, apple cider, maple sugar and vanilla extract.
3. Sift in the dry ingredients and mix until fully combined. Fold in chopped apple
4. Divide batter into 12 greased doughnut holes ( usually 2 pans of 6) and bake at 350° for 15 minutes or until cooked through.
5. For the glaze, whisk 4 tablespoons of melted butter, 1/4 cup maple syrup, 1 teaspoon vanilla extract and 1 cup powdered sugar. If its too watery, add more powdered sugar but if its too dry, add in a tiny splash of milk if need be.
