Chocolate PB Rice Cakes
Ingredients
6 thin brown rice cakes
¼ cup peanut butter
1 tablespoon protein powder
1 tablespoon honey
5-6 tablespoons almond milk (or milk of choice)
½ cup semi-sweet chocolate
1 teaspoon coconut oil
Method
1. In a small bowl, mix peanut butter, honey, protein powder and milk. Depending on the brand of protein powder and how runny your peanut butter is, you may need to add more milk.
2. Divide “dough” into 6 servings and spread evenly over each cake.
3. In a saucepan on low heat, melt chocolate and coconut oil until silky smooth. Dip or spread melted chocolate over top each rice cake, Top with flaky salt (and anything else you want) and place into the freezer for 1 hour.
4. Enjoy!
